Healthy Brown Bread - cooking recipe
Ingredients
-
5 c. warm water
1 to 2 pkg. yeast (depending on how fast you want it to rise)
1/2 c. oil
1/2 c. molasses
1/2 c. honey
2 tsp. to 1 Tbsp. salt
1 tsp. poppy seed
1 tsp. sunflower seeds
1 tsp. seed of your choice
8 c. whole wheat flour
2 to 3 c. rye flour
unbleached flour or other flour, enough to make firm but still soft dough
Preparation
-
Fast, easy one bowl directions:
Put 4 cups of the water through the coffeemaker to heat.
Get small bowl or cup and put one half of a cup of the hot water in it and enough of the remaining one cup of cold water in it to make warm, but not hot.
Dissolve yeast in hot water.
Get a large plastic bowl, pour the 4 1/2 cups of hot water and the remaining cold water together in bowl.
Using a two-cup measuring cup, if possible, pour the oil first, then the molasses and honey (the oil coats the cup and keeps the molasses and honey from sticking on the cup) into the bowl, add the salt and stir mixture well.
Add the whole wheat flour gradually.
Mix in seeds.
Mix in remaining flour until your dough is soft but firm. Knead well and rub surface with a little oil.
Put cover on bowl and let rise until double.
Punch down and divide into three parts. Put in bread pans or cake pans for round loaves.
Bake at 325\u00b0 for 20 to 30 minutes.
Bake until top is nicely browned.
Make sure you don't take out too soon.
Take out of pans and cool on racks, rub surface with stick of butter while hot and let cool (cover with cloth if desired).
Makes great bread; slices well, extremely healthy for snacks, sandwiches, toast, etc.
Three loaves lasts us only about 5 days or so.
