New Year'S Day Black-Eyed Peas - cooking recipe

Ingredients
    16 oz. pkg. black-eyed peas
    1/2 lb. salt pork
    3 c. onion
    1 bunch green onion
    1 c. chopped parsley
    1 c. green pepper
    2 cloves garlic
    2 lb. smoked sausage, cut in 1-inch pieces
    salt to taste
    red pepper to taste
    pepper to taste
    3 dashes hot sauce
    1 Tbsp. Worcestershire sauce
    1 (8 oz.) can tomato sauce
    1/2 tsp. thyme
    1/4 tsp. oregano
    rice
Preparation
    Soak peas overnight.
    Cook pork, peas and water for 45 minutes on low heat.
    Add the rest of the ingredients except for sausage. Cover.
    Cook 45 minutes to 1 hour on low heat.
    Add sausage.
    Cook uncovered 45 minutes.
    Serve over rice.
    Makes 10 servings.
