Chicken Gravy - cooking recipe

Ingredients
    1 c. clear chicken broth or defatted chicken essence from the roasting pan
    1/4 c. skim milk
    2 Tbsp. flour
    freshly ground pepper
Preparation
    Combine flour and skim milk, beating until smooth, or shake mixture in tightly capped jar.
    Gradually add to chicken broth or essence in saucepan.
    Cook over medium heat, stirring constantly, until thick.
    Add seasoning; reduce heat and continue to cook, stirring, 5 minutes longer.
    Yield:
    1 cup.
    Approximate calories/serving:
    1 cup = 80, 1 tablespoon = 5.
