Jello Delight(Mold) - cooking recipe

Ingredients
    3/4 c. grated carrots
    3/4 c. crushed pineapple
    1 pkg. lemon gelatin
    1/2 c. pineapple juice
    24 large marshmallows
    1 pkg. cream cheese
Preparation
    Mix marshmallows and pineapple juice over low heat, stirring constantly.
    In a separate bowl, boil water and mix in lemon gelatin; set aside to let cool.
    In a large mixing bowl, mix softened cream cheese, pineapple and carrots.
    Blend in marshmallow mixture and lemon gelatin.
    Pour mixture into mold (remember to coat mold with cooking oil).
    Put in refrigerator to thicken overnight.
    Serves 6 to 8 (recipe can be doubled).
