Sourdough Bread #1 - cooking recipe

Ingredients
    1 pkg. dry yeast
    2 c. warm water
    1 Tbsp. sugar
    2 1/2 c. unbleached flour
Preparation
    Sprinkle yeast and sugar over water in large bowl; stir to dissolve.
    Let stand until foamy, about 5 minutes.
    Add flour and whisk until smooth.
    Cover and let stand in warm place until sour aroma develops, stirring daily, 2 to 3 days.
    Put in 1 cup covered crocks or jars and refrigerate.
    Makes 3 cups.
