Gazpacho(Makes 6 Servings) - cooking recipe

Ingredients
    4 c. cold tomato juice
    1 small, well minced onion
    2 c. freshly diced tomatoes (using plum Italian tomatoes adds to flavor)
    1 c. minced green pepper
    1 diced cucumber (pickling cucumbers are particularly good)
    2 scallions, chopped
    1/4 c. freshly chopped parsley (definitely use fresh)
    juice of 1/2 lemon
    juice of 1 lime
    1 tsp. honey
    1 clove crushed garlic
    2 Tbsp. wine vinegar
    1 tsp. tarragon
    1 tsp. basil
    2 Tbsp. olive oil (you can cut down significantly; when I make 1 1/2 times the recipe, I only use 1 Tbsp.)
    dash of ground cumin
    dash of Tabasco sauce
    salt and pepper to taste
Preparation
    Combine all ingredients and chill for at least 2 hours.
    It can be pureed, too, if you like a less \"chunky\" soup.
