Linguini Pomodoro - cooking recipe
Ingredients

3 c. diced roma tomatoes
2 Tbsp. fresh chopped garlic
2 Tbsp. cold butter
4 Tbsp. olive oil
5 leaves fresh basil or 1/4 tsp. dried basil
1/3 c. chicken broth, water or vegetarian broth
1 lb. dried linguini or 1 pkg. fresh linguini, cooked and drained
pinch of salt (optional)
Preparation

In a 10 to 12-inch saucepan, melt butter and olive oil over medium heat for one minute.
Add garlic and simmer for one more minute.
Add tomatoes and basil to pan and sauce for four minutes. Add chicken broth and simmer for four minutes until sauce thickens.
Add your linguini, toss and serve on platter.
Will feed four people.
Romano cheese over top, optional.
