Apricot Bread - cooking recipe
Ingredients

3/4 c. dried apricots
1 c. warm water
3/4 c. white flour
3/4 c. whole wheat flour
1/2 c. wheat germ
3/4 c. rolled oats
2/3 c. sugar
1 Tbsp. baking powder
1/4 tsp. baking soda
3/4 tsp. salt
1 tsp. cinnamon
1/2 tsp. freshly ground nutmeg
1 egg, beaten lightly
2 Tbsp. melted shortening or oil
1/2 to 3/4 c. chopped walnuts
Preparation

Soak dried apricots in warm water for 30 minutes.
Save water. Sift together flour, wheat germ, rolled oats, sugar, baking powder, baking soda, salt, cinnamon and nutmeg.
Add egg, oil, 3/4 cup of the saved apricot water, walnuts and the coarsely chopped apricots.
Place batter in a greased loaf pan.
Bake at 350\u00b0 for about 50 minutes or until done.
Cool for 10 minutes and remove from pan.
Store for 24 hours before serving.
