Horiatiki Salata (Greece)(Summer Salad) - cooking recipe
Ingredients

3 tomatoes, cut in wedges
1 cucumber, sliced
1 onion, sliced
2 green peppers, cut in rings
6 Tbsp. olive oil
salt and pepper
1/3 lb. Feta cheese
2 doz. black olives
chopped parsley
2 Tbsp. wine vinegar
Preparation
-
Place tomatoes, cucumber, onion and peppers in a large salad bowl.
Shake together the olive oil, vinegar, salt and pepper. Pour dressing over the salad.
Place wedges of Feta cheese and olives on top of salad.
Add sprinkles of parsley over the top of the salad as final garnish.
Serves 4 to 6.
