Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant
    1 can whole tomatoes
    1 c. grated cheese
    1/3 c. bread crumbs
    1 c. finely ground bread crumbs, buttered
    2 eggs
    1 large chopped onion
    6 Tbsp. margarine
    salt and pepper
Preparation
    Peel eggplant, cut into small pieces and boil in salted water until tender.
    Drain and mash.
    Saute onions in margarine until tender but not brown.
    Add eggplant, tomatoes, cheese and 1/3 cup bread crumbs.
    Add eggs, cooking and stirring until eggs are cooked.
    Pour into baking dish and top with buttered crumbs.
    Bake at 350\u00b0 until brown on top.
