Roast Goose - cooking recipe

1 (6 to 8 lb.) goose
Preparation

Preheat oven to 400\u00b0.
Place goose, breast side up, on rack, about 1-inch from bottom of roaster.
After 30 minutes, turn down to 375\u00b0 and prick goose with fork around breast, back and drumsticks, letting excess fat escape.
Let cook about 20 minutes per pound.
