Infatica Koosa (Koosa Stew) - cooking recipe

Ingredients
    4 to 5 large Koosa or summer-type squash (diced whole)
    2 green peppers, cored and diced
    1 large onion, diced
    1 lb. lean ground beef
    1 can tomato paste
    water
    salt, pepper, cinnamon and dried mint to taste
Preparation
    Dice vegetables.
    Brown meat and onions in a Dutch oven.
    Add peppers and Koosa and stir.
    Add tomato paste, spices to taste, and enough water to cover.
    Let mixture come to a boil, then simmer and cover until vegetables are tender (approximately 45 minutes). Serve over rice if preferred.
