Ratatouille - cooking recipe

Ingredients
    olive oil
    3/4 c. thinly sliced onion
    2 cloves garlic, minced
    4 green peppers, julienned
    2 1/2 c. peeled, diced eggplant
    3 c. zucchini, cut in 1/2-inch slices
    2 c. peeled, seeded and quartered tomatoes
    salt and pepper
    1 tsp. basil
Preparation
    Saute onion and garlic in olive oil, combine with next 4 ingredients.
    Layering; add salt and pepper to each layer. Sprinkle top with olive oil.
    Cover; simmer 35 to 45 minutes, uncover and continue to heat 10 minutes.
    Flavor is best if allowed to stand awhile or made ahead.
