Oatmeal Muffins - cooking recipe
Ingredients

1 1/4 c. flour
3/4 c. uncooked rolled oats
1/2 c. sugar
2 1/2 tsp. baking powder
1/4 tsp. salt
1/2 c. milk, at room temperature
1/3 c. butter, melted and cooled
1 large egg, at room temperature
1 1/2 tsp. vanilla
3/4 c. raisins (optional)
1/2 c. chopped nuts (optional)
Preparation

Lightly butter muffin tins.
Stir together flour, oats, sugar, baking powder and salt.
In another bowl, combine milk, butter, egg and vanilla.
Make a well in the center of the flour mixture. Add the milk mixture and stir to combine.
Stir in raisins and nuts.
Spoon in cups.
Bake 15 to 20 minutes (until a toothpick inserted in the center comes out clean) at 400\u00b0.
Remove to
a wire rack and cool 5 minutes.
Remove from tins.
