Nutmeg Bread - cooking recipe
Ingredients

vegetable oil spray
3/4 c. sugar
1/4 c. acceptable margarine
egg substitute equivalent to 1 egg or 1 egg, well beaten
1/4 c. unsweetened applesauce
2 c. sifted all-purpose flour
1 Tbsp. freshly grated nutmeg or 1 tsp. ground
1/2 tsp. baking powder
1/2 tsp. baking soda
1 c. nonfat or low-fat buttermilk
Preparation

Preheat oven to 350\u00b0. Lightly spray a 9 x 5 x 3-inch loaf pan with vegetable oil spray. In a large mixing bowl, cream sugar and margarine. Add egg substitute and applesauce and beat well. Put remaining ingredients, except buttermilk, in a medium bowl. Sift together twice. Alternately add flour mixture and buttermilk to sugar mixture, beginning and ending with flour, stirring after each addition. Pour batter into loaf pan. Bake for 45 to 60 minutes or until cake tester or toothpick inserted in center comes out clean. Let cool in pan for 10 minutes, then turn bread onto cooling rack.
Serves 16 (1 slice per serving).
