Fish Fillets Baked In Foil - cooking recipe
Ingredients

3 lb. fillets (any kind, sole, flounder)
6 small white onions or 3 medium
6 small carrots
1/3 c. margarine
1 tsp. salt
1/4 tsp. pepper
1 Tbsp. minced parsley
1 1/2 Tbsp. lemon juice
6 thin slices Swiss cheese
Preparation

Cut each fillet into 3 portions.
Place each in center of 8-inch square of buttered, double-duty aluminum foil.
Peel and thinly slice onions and carrots.
Place over fillets.
Melt margarine; pour over each serving.
Dust with pepper, salt and parsley.
Sprinkle with lemon juice.
Top with cheese.
Fold foil over fish and close all edges.
Place on cookie sheet.
Bake 30 minutes in hot oven at 425\u00b0.
Open foil and serve.
