Ingredients

1/4 c. cornstarch
1/2 c. sugar
1/4 tsp. salt
2 c. scalded milk
3 egg yolks, beaten
1 c. shredded coconut
1/2 tsp. vanilla
Preparation

Combine cornstarch, sugar and salt in a double boiler or heavy saucepan.
Gradually add scalded milk and cook over hot water until it starts to thicken.
Add small amount of hot mixture to egg yolks and return to mixture.
Cook 2 more minutes.
Add vanilla and coconut.
Pour into pie shell.
Top with meringue and bake at 375\u00b0 for 20 to 25 minutes.
