Crawfish Dip - cooking recipe

Ingredients
    2 lb. crawfish tails, deveined and finely chopped
    3 stalks celery, chopped
    1 c. onions, chopped
    1 bell pepper, chopped
    1 stick butter
    3 cans mushroom soup
    1 can pimento, chopped
    1 c. grated Cheddar cheese
Preparation
    Simmer crawfish (in pieces), celery, onions, peppers and butter until seasonings are done. Add soup, pimento and cheese. Season to taste with red pepper. Serve with Melba rounds or assorted crackers. Makes 3 quarts.
