Mock Hollandaise Sauce - cooking recipe

Ingredients
    1/4 c. butter
    2 Tbsp. flour
    1/8 tsp. white pepper
    1/4 tsp. salt
    1/4 tsp. paprika
    1 c. milk
    1 Tbsp. lemon juice
    2 egg yolks, beaten well
Preparation
    In saucepan, melt 2 tablespoons butter.
    Blend in flour and seasonings.
    Cook over low heat, stirring, until mixture is smooth and bubbly.
    Remove from heat.
    Gradually stir in milk.
    Return to heat; cook until thickened.
    Add remaining 2 tablespoons butter and lemon juice.
    Blend several tablespoons of the hot sauce with the beaten egg yolks, then gradually add to sauce mixture.
    Cook over low heat until smooth and thick, stirring constantly.
    Do not boil.
    Makes 1 1/2 cups.
