Low-Fat Cheese-Stuffed Manicotti - cooking recipe

Ingredients
    2 cloves minced garlic
    1 Tbsp. olive oil
    2 qt. canned tomatoes
    1 1/2 tsp. oregano leaves
    1 Tbsp. chopped parsley
    2 c. non-fat cottage cheese
    1 c. non-fat Ricotta cheese
    3 Tbsp. freshly grated Parmesan cheese
    2 egg whites
    1/4 c. chopped parsley
    dash of pepper
    8 oz. uncooked manicotti shells (15 pieces)
Preparation
    Saute garlic in olive oil.
    Add tomatoes, oregano leaves and 1 tablespoon chopped parsley.
    Simmer for 45 minutes to 1 hour, stirring occasionally.
