Upside-Down Ham Loaf - cooking recipe

Ingredients
    1/3 c. brown sugar, firmly packed
    1 c. canned crushed pineapple, drained
    1 lb. ground ham
    1 lb. ground pork
    1 c. fine dry bread crumbs
    2 eggs, beaten
    1 c. milk
    1 c. celery, finely chopped
    1/4 tsp. pepper
    maraschino cherries for finished loaf
Preparation
    Sprinkle brown sugar over bottom of greased pan, 9 x 5 x 3-inches.
    Spread pineapple over sugar.
    Combine all other ingredients, reserving cherries.
    Pack mixture lightly into loaf pan.
    Bake in 350\u00b0 oven for 1 1/4 hours.
    Unmold loaf onto heated platter and garnish with cherries and sprigs of parsley.
