Eggplant Fritters - cooking recipe
Ingredients

1 small size eggplant
1 tsp. vinegar
1 egg
1/2 tsp. salt
3 Tbsp. all-purpose flour
1/2 tsp. double-acting baking powder
Preparation

Pare and slice eggplant; cook until tender in vinegar and boiling water to cover.
Drain eggplant, mash and beat in remaining ingredients.
Drop batter from spoon into hot deep fat. Fry until golden.
Yields about 10 fritters.
