Feel Good Cheesecake - cooking recipe
Ingredients

6 graham crackers (2 1/2 x 2 1/2-inch)
1 1/2 Tbsp. diet margarine, melted
1 Tbsp. granulated gelatin
1/2 c. cold water
1/3 c. boiling water
1/2 tsp. grated lemon rind
1/2 c. lemon juice
6 packets Equal
2 Tbsp. water
2 c. low-fat cottage cheese
1/2 tsp. lemon extract
4 large strawberries
Preparation

Prepare an 8 x 8 x 2-inch pan with Pam.
Make fine crumbs with graham crackers and mix with melted margarine.
Soak gelatin in cold water.
Combine boiling water, lemon rind, lemon juice and sugar, stirring until dissolved.
Chill until it is the consistency of unbeaten egg whites.
Put 2 tablespoons water, cottage cheese and lemon extract into blender.
Cover and turn to high speed for 10 to 15 seconds.
Add gelatin mixture; turn to high speed for 15 seconds.
Pour into prepared pan.
Sprinkle graham crackers over the top.
Slice strawberries and arrange on top.
Chill.
Makes 9 servings.
