Cucumber Buttermilk Dressing - cooking recipe

Ingredients
    1 c. peeled, seeded and finely chopped cucumber
    2/3 c. nonfat buttermilk
    1/4 c. reduced calorie mayonnaise
    1/8 tsp. garlic powder
    2 Tbsp. fresh parsley
    1/8 tsp. salt
    1/8 tsp. pepper
    1/2 tsp. minced fresh chives
Preparation
    Press chopped cucumber between paper towels to remove excess moisture. Combine cucumber and remaining ingredients in small mixing bowl, stirring until well blended. Cover and chill dressing thoroughly. Serve dressing with salad greens.
    Yields 4 1/2 cups.
