Ada Style Pork Chops - cooking recipe
Ingredients

6 thick boneless pork chops
flour
1/4 - 1/2 c. olive oil
3 cloves garlic
1 lg. onion, finely chopped
1 small can tomato paste
1 c. boiling water
1 c. white cooking wine
1 tsp. lemon rind
cracked pepper to taste
Preparation

Dredge pork chops in flour and brown in olive oil in cast iron skillet.
Add onion and garlic.
Stir in tomato paste, boiling water and cooking wine.
Add lemon rind, cracked pepper and salt.
Bring to a boil.
More water and wine can be added if sauce does not cover meat.
Cover and lower heat to simmer until tender, 2 hours or
more.
Even better if cooked, refrigerated overnight and reheated!!
Serve with saffron rice.
