Ratatouille - cooking recipe

Ingredients
    2 large onions
    2 medium eggplant
    4 tomatoes
    2 green peppers
    olive oil
    salt and pepper
Preparation
    Peel tomatoes.
    Cut unpeeled eggplant into squares.
    Slice onion and peppers.
    Saute onions in plenty of oil until soft.
    Add peppers, then eggplant.
    Ten minutes later, add tomatoes.
    Simmer, covered for 15 minutes and uncovered for 15 more.
    Good hot or cold.
    Goes well with roast lamb and noodles.
