Herb Chicken - cooking recipe
Ingredients

3 lb. roasting chicken
1/4 tsp. salt
1/4 tsp. pepper
2 Tbsp. Italian olive oil
2 Tbsp. crushed rosemary leaves
1 Tbsp. crushed sage leaves
2 large yellow onions, peeled and quartered
1 small garlic bud, minced and mixed with 2 Tbsp. melted butter
unsalted butter and additional olive oil
Preparation

Sprinkle chicken inside and out with salt and pepper.
Stuff with onions and sage.
Lift skin from breast of chicken, taking care not to break the skin, and pour in 2 tablespoons of melted butter mixed with the garlic.
Truss chicken.
Run skin with olive oil.
Sprinkle entire chicken with rosemary leaves and pepper. Halfway through cooking, sprinkle with salt.
