Stuffed Zucchini - cooking recipe

Ingredients
    4 medium zucchini, trimmed
    1/2 c. fresh bread crumbs
    3/4 c. grated Parmesan cheese
    1/2 c. shredded Cheddar cheese
    2 Tbsp. chopped green chilies
    1 medium tomato, chopped
    2 eggs
    1/2 tsp. salt
Preparation
    Halve zucchini lengthwise and place in a medium saucepan of boiling water.
    Cook 10 minutes.
    Drain and let cool on wire racks.
    Scoop out pulp, leaving firm shells.
    Chop pulp into small pieces.
    Place zucchini pulp and remaining ingredients in a bowl. Mix at medium speed for 2 minutes.
    Place zucchini shells on a lightly greased 10 1/2 x 15 1/2 x 1-inch jelly roll pan.
    Spoon zucchini mixture into shells.
    Bake at 350\u00b0 for 30 minutes. Serve immediately.
    Yield: 8 servings.
