6 heaping Tbsp. self rising flour
3 heaping Tbsp. self rising corn meal
2 eggs - separated
2 Tbsp. sugar
1 c. buttermilk
1 tsp. vanilla
1/4 tsp. soda
4 Tbsp. melted margarine
Preparation

Mix corn meal, sugar, flour and soda. Add buttermilk, egg yolks, melted margarine and vanilla. Mix well. Beat egg whites until stiff. Add 1 Tbsp. sugar and beat again until stiff peak forms. Fold egg whites into the batter. Have skillet heated and cook pancakes until done.
