Harvest Potato Soup - cooking recipe

Ingredients
    1/2 c. chopped green onion
    1 onion, chopped
    1 Tbsp. butter
    4 c. chicken stock
    3 c. pared and diced potatoes
    2 medium carrots, pared and thinly sliced
    1 c. zucchini, diced in 1/2-inch pieces
    3 c. finely shredded spinach
    salt to taste
    white pepper to taste
Preparation
    Saute onions in butter in saucepan.
    Cook over low heat, covered, about 5 minutes.
    Add remaining ingredients except spinach, salt and white pepper.
    Simmer, covered, 20 minutes.
    Add spinach and seasonings to taste.
    Heat thoroughly.
