Fish-Flake Croquettes - cooking recipe

Ingredients
    2 c. flaked cooked fish
    1 tsp. onion juice
    salt and pepper
    chopped parsley
    1 c. medium white sauce
    cracker crumbs
    1 egg, beaten
Preparation
    Mix fish flakes with seasonings; add to white sauce and chill thoroughly.
    Mold into croquettes; roll in cracker crumbs.
    Dip into slightly beaten egg and roll in crumbs again.
    Fry in hot deep fat (375\u00b0) about 3 minutes or until brown.
    Makes 6 medium croquettes.
