Potato Mix-Up - cooking recipe
Ingredients

1 lb. sliced bacon
2 medium white onions
1 green pepper
3 stalks celery
1 c. green onions
1/2 c. chopped parsley
4 c. cubed potatoes
salt and pepper to taste
Preparation

Cut bacon into 1-inch pieces and fry until 1/2 done.
Cube onions, pepper and celery.
Add these and the rest of ingredients to bacon.
Cook on low, stirring often.
Doesn't hurt to mash up while cooking.
Cook until potatoes are tender.
Good with eggs for breakfast or as a vegetable dish for any meal.
