Chicken Pineapple Salad - cooking recipe
Ingredients

2 1/2 lb. boneless chicken, poached and skinned
2 c. diced celery
2 c. diced fresh pineapple (1/2-inch pieces)
1/2 c. heavy cream, whipped
1 c. mayonnaise
salt and pepper to taste
Preparation

Cut chicken into 1-inch chunks.
Combine with celery and pineapple in a bowl.
Whisk cream and mayonnaise together until blended and pour over chicken.
Toss to coat thoroughly.
Season to taste.
Line 6 salad plates with lettuce leaves and mound on each plate.
Serve.
