Chicken Roll-Ups - cooking recipe

Ingredients
    8 large chicken cutlets (about 5 to 6 oz. each)
    4 tsp. olive oil
    1 tsp. butter or margarine
    1 large onion, chopped
    1 clove garlic, minced
    2 c. diced mushrooms
    2 tsp. rosemary
    1 pkg. frozen chopped spinach (10 oz.)
    1/2 c. bread crumbs
    1 egg white, lightly beaten
    2 1/2 tsp. oregano
    1/2 tsp. salt
    black pepper to taste
    6 oz. shredded Mozzarella
    2/3 c. dry vermouth
Preparation
    You will also need olive oil spray.
