Mock Sausage - cooking recipe

Ingredients
    4 c. cooked black-eyed peas, drained
    1 c. flour
    1 tsp. salt
    1 Tbsp. ground sage
    1/4 tsp. black pepper
    1 1/2 tsp. crushed cayenne pepper (optional)
Preparation
    Mash peas.
    Add salt, pepper and sage to flour.
    Mix well. Add to mashed peas; mix and form into patties.
    Fry in hot oil until browned.
    A good, no cholesterol sausage.
