Western Style Eggs - cooking recipe
Ingredients

12 eggs
1/4 tsp. pepper
2 large red peppers
1 (12 oz.) can corned beef
1/2 c. water
5 Tbsp. salad oil
2 large green peppers
Preparation

Cut peppers in strips.
In large bowl with fork or whisk, beat eggs, water and pepper until mixed; set aside.
In 12-inch skillet over medium heat, cook red and green peppers in 2 tablespoons hot salad oil until tender.
With slotted spoon, remove peppers to bowl with egg mixture.
In same skillet, on high heat in 3 more tablespoons hot salad oil, cook mixture until it begins to set. With spatula, lift edge as it sets, tilting pan to allow uncooked portion to run under.
Crumble corned beef over egg mixture. Reduce heat to medium low; cook, covered, for 10 minutes.
Makes 6 main dish servings.
