Black Bean Salad With Mangoes-Salsa - cooking recipe
Ingredients

3 c. black beans (I use canned black beans, rinsed)
1/2 tsp. salt
2 cloves garlic, minced
2 mangoes, peeled and pitted*
1 diced red pepper
1 diced red onion
1/4 c. chopped parsley
1 Tbsp. cumin
1 Tbsp. chili powder
1 Tbsp. olive oil
8 Tbsp. lime juice
Preparation

*I use canned fresh mangoes found in refrigerator section of Giant.
These are already peeled and pitted, packed in a light syrup which can be drained.
