Pumpkin Roll - cooking recipe
Ingredients

3 eggs
1 c. sugar
1 tsp. lemon juice
1 tsp. soda
1/4 tsp. salt
1 tsp. ground ginger
1/2 tsp. ground nutmeg
3/4 c. all-purpose flour
2/3 c. cooked pumpkin or canned
1 c. chopped nuts
powdered sugar
1 c. sifted powdered sugar
8 oz. cream cheese, softened
1/4 c. margarine, softened
1 tsp. vanilla
1 tsp. lemon juice
Preparation

Beat eggs on high for 1 minute.
Add sugar and 1 teaspoon lemon juice.
Beat well.
Add soda, salt and spices.
Fold in flour and pumpkin.
Mix well.
Spread batter onto a greased cookie sheet or jelly roll pan.
Sprinkle with nuts.
Bake at 375\u00b0 for 20 minutes.
