Good-For-You-Chili - cooking recipe

Ingredients
    4 c. water
    1 (28 oz.) can crushed tomatoes
    2 (16 oz.) cans pinto or kidney beans, rinsed and drained
    1 (16 oz.) can solid-pack pumpkin
    1 c. chopped onion
    1 c. chopped bell pepper
    2/3 c. dry bulgur wheat
    1 (4 oz.) can chopped green chilies
    2 1/2 Tbsp. chili powder
    1 tsp. ground cumin
    1 tsp. minced garlic
Preparation
    Combine all ingredients into a 4 to 5-quart pot.
    Bring to a boil, reduce heat and simmer, uncovered, 30 to 35 minutes or until bulgur is tender.
    Serve with fat-free sour cream, plain no-fat yogurt, sliced scallions or shredded no-fat Cheddar cheese. Serves 6.
