Pecan Pie Mini Muffins - cooking recipe

Ingredients
    1 c. brown sugar
    1/2 c. flour
    1 c. chopped pecans
    2/3 c. butter (no substitutes), melted
    2 eggs, beaten
    1/2 tsp. vanilla extract
Preparation
    In a bowl, combine brown sugar, flour and pecans; set aside. In another bowl, combine melted butter and beaten eggs; mix well. Stir into flour mixture just until moistened. Fill greased and floured mini muffin cups 2/3 full. Bake at 350\u00b0 for about 15 to 16 minutes. Do not overbake. Remove immediately to wire rack to cool. Makes 2 1/2 dozen.
