Ingredients

beets (from garden)
3 c. sugar
2 Tbsp. pickling spice
1/2 c. salt
3 1/2 c. white vinegar
1 1/2 c. water
Preparation

Cook beets 2 hours, until soft like a potato. Pour water off and put in cold water. Peel (skin should come right off). Cut in chunks or slices. Then make juice with remaining ingredients. Put beets in juice and bring to a boil. Then put hot beets in jars and tighten to seal.
