Three Cheese Enchiladas - cooking recipe

Ingredients
    1 1/2 c. shredded Monterey Jack cheese
    1 1/2 c. shredded Cheddar cheese
    1 (3 oz.) pkg. cream cheese, softened
    1 c. Pace picante sauce
    1 medium red bell pepper, diced
    1/2 c. sliced green onion
    8 (7 to 8-inch) flour tortillas
    1 tsp. cumin
    shredded lettuce
    chopped tomato
Preparation
    Combine 1 cup Monterey Jack cheese, 1 cup Cheddar cheese, 1/4 cup picante sauce, red pepper, onions, and cumin and mix well. Spoon 1/4 cup cheese mixture down center of each tortilla.
    Roll and place seam down in a 9 x 13-inch baking dish. Spoon remaining picante sauce evenly over enchiladas; cover with remaining cheese. Bake at 350\u00b0 for about 20 minutes or until hot.
    Top with lettuce and tomato and serve with additional picante sauce.
    Makes 4 servings.
