Apricot-Pineapple-Pecan Cheese Ball - cooking recipe

Ingredients
    1 1/2 c. mild grated cheddar cheese
    2 (8 oz.) pkg. cream cheese, softened to room temperature
    1 (8 oz.) can crushed pineapple, well drained
    1/3 c. red bell peppers, minced
    1/3 c. green onions, minced
    1 tsp. lemon pepper seasoning
    1 tsp. seasoned salt
    2 c. pecans, chopped (1 cup for mixture, 1 cup to roll ball in)
    1 (8 oz.) jar pineapple-apricot preserves
Preparation
    Stir cream cheese until smooth and add grated cheese;
    stir in drained pineapple, red peppers, onions, seasonings and 1 cup of the nuts.
    Turn out onto a sheet of plastic wrap and shape into a ball.
    Refrigerate several hours or overnight.
    Roll ball in remaining 1 cup of nuts to coat.
    Thin the preserves slightly with a tablespoon of water and stir well.
    Pour preserves over the cheese ball and serve with your favorite crackers.
