Carrot Bran Muffins - cooking recipe
Ingredients

1 1/2 c. whole wheat pastry flour
3/4 tsp. salt
1 1/2 tsp. baking soda
1 1/2 c. bran
1 tsp. cinnamon
1/2 tsp. nutmeg
1 1/2 c. milk or Rice Dream
2 Tbsp. apple cider vinegar
1/2 c. honey (scant)
1 c. packed grated carrots
1/4 c. oil
3/4 c. raisins
1/2 c. chopped walnuts
Preparation

Preheat oven to 375\u00b0.
Combine in medium bowl the first 6 ingredients.
Combine in large bowl the remaining ingredients. Combine wet and dry ingredients.
Mix just enough to moisten dry ingredients.
Pour into greased muffin tins and bake for 20 to 25 minutes.
Makes 18 muffins.
