Green Chili-Rice Casserole - cooking recipe

Ingredients
    2 c. cooked rice
    2 eggs
    1/2 c. oil
    1 tall can evaporated milk
    1/2 to 3/4 lb. sharp Cheddar, grated
    1/2 small can green chili, diced
    1 onion, chopped fine
    2 Tbsp. parsley
    dash of cayenne pepper
    salt and pepper
Preparation
    Cook the rice and let cool.
    Beat eggs well and slowly add oil while still beating.
    Add milk to rice in casserole dish, then add egg mixture, cheese, chili, onion, parsley and seasonings.
    Save a little cheese for the top.
    Bake at 400\u00b0 for 45 minutes.
