Cucumber And Carrot Relish - cooking recipe
Ingredients

7 c. ground large ripe or green peeled cucumbers
3 c. ground carrots
4 onions
1/2 c. pickling salt
2 green peppers, ground
2 red peppers, ground
3 c. vinegar
3 c. sugar
1/2 tsp. turmeric powder
1 Tbsp. mustard
1 Tbsp. celery seed
Preparation

Mix salt with ground vegetables.
Let stand 3 hours.
Drain off liquid.
Boil vinegar and sugar for 3 minutes.
Put seeds in a cheesecloth bag and float in kettle with vinegar and sugar mixture. Drain vegetables and add to vinegar and sugar mixture.
Remove the bag of seeds.
Cook for 30 minutes on low heat.
Put in sterilized pint jars and seal.
