Ingredients

1 1/2 c. coconut milk
1 1/2 c. water
1/2 c. sugar
1/2 c. cornstarch
1 tsp. vanilla (optional)
Preparation

Combine coconut milk and sugar in saucepan.
Mix cornstarch with water.
Add to coconut milk and sugar in pan; stir until smooth.
Stir over medium heat until thick.
Pour into pan. Refrigerate until set.
Cut into squares.
