Peanut Brittle - cooking recipe
Ingredients
-
2 c. white sugar
1 c. white corn syrup
1/2 c. water
1 Tbsp. margarine
2 c. raw peanuts
1 tsp. vanilla
1/2 tsp. baking soda
Preparation
-
Mix the sugar, corn syrup and water in a greased 2-quart saucepan.
(I use Pam cooking spray.)
Stir constantly and cook the mixture to 238\u00b0 on a candy thermometer or the soft ball stage. Add the margarine and the peanuts.
Still stirring, cook the mixture to 300\u00b0 or the hard crack stage.
Remove the pan from the burner and add the vanilla and soda.
Stir until the mixture becomes foamy.
Spread the mixture on a greased cookie sheet.
Let it cool, then break it into bite-size pieces.
