Miner'S Breakfast - cooking recipe

Ingredients
    4 large Russet potatoes, boiled, peeled and cubed
    8 pieces bacon, fried crisp and crumbled
    4 Tbsp. butter
    1/2 bell pepper, finely chopped
    minced garlic to taste
    salt and pepper to taste
    12 eggs, slightly beaten
    2 c. grated sharp Cheddar cheese
Preparation
    Melt butter in skillet.
    Add potatoes and pepper and brown slightly.
    Add garlic, salt and pepper.
    Pour eggs over potatoes and cook until eggs form soft curds, stirring constantly.
    Mix in crumbled bacon.
    Sprinkle grated cheese over top.
    Place skillet in oven or under broiler until cheese is melted.
    Makes 8 servings.
