Beef And Eggplant Casserole - cooking recipe

Ingredients
    2 lb. ground beef
    1 medium onion, chopped
    1 green pepper, chopped
    2 (8 oz.) cans tomato sauce
    1 tsp. salt
    1/2 tsp. dried oregano
    1/2 tsp. dried basil
    1/8 tsp. black pepper
    2 medium eggplants, cut into 2-inch cubes
    1/2 lb. Mozzarella cheese, sliced
Preparation
    Brown meat in heavy skillet.
    Add onion and pepper; cook about 2 minutes, stirring frequently.
    Add tomato sauce, salt, oregano, basil and pepper.
    Stir well to blend.
    Cook 5 to 10 minutes. Place eggplant in buttered 13 3/4 x 9 1/2 x 2-inch baking dish. Pour meat mixture over eggplant.
    Bake in a moderate oven at 350\u00b0 for about 20 to 25 minutes or until hot and bubbly.
    Arrange cheese slices on meat.
    Continue to bake 5 to 10 minutes or until cheese melts.
